  1. Shredded Bamboo Shoots
  2. Salt to taste
  3. Turmeric powder – 1 teaspoon
  4. Water to boil the shoots
  5. 1 medium sized tomato
  6. 1/2 chopped onion (optional)
  7. 1/2 teaspoon mustard seeds (optional)

Recipe

  1. Wash the bamboo shoots in a strainer with running water.
  2. Place them in a pan of water, add salt and bring to boil for 10 minutes or till the raw smell of bamboo is gone.
  3. In another pan, toss chopped tomatoes for 2 minutes.
  4. Add 1 teaspoon of turmeric powder.
  5. You can add a temper of mustard seeds or half an onion if you like.
  6. When the tomatoes are 50% cooked, remove the bamboo shoots from boiling water and place it in this pan.
  7. Mix well and turn the flame to the lowest level.
  8. Cover and cook till 5 minutes.
  9. Turn off the flame.

The dish is ready to serve and goes best with Rice and Dal.
