Glycemic Index and Load of Ragi
Ragi has a moderate glycemic index of 54 to 68, which is suitable for people seeking to increase complex carbs, people on weight management plans, diabetic people and calorie conscious. For comparison, rice has a glycemic index of 70 to 90.
Ingredients
Ragi flour – 1 cup (100-150 gram) for 1 serving.
If you have whole Ragi grains, blend them in a mixer grinder until it becomes similar in texture to atta (wheat flour).
Recipe for Ragi Mudde
Estimated Preparation Time: 5 minutes
- In a wide mouthed pan, add some oil and spread it. It will prevent the ragi flour from sticking.
- Alternatively you can also use a non-stick pan.
- Add 200 ml water and bring it to boil.
- Add 1 teaspoon salt for every 100 gram ragi flour.
- Lower the flame to the lowest setting on your gas stove.
- Once it boils, add ragi flour into the pan and keep stirring until the flour wets completely. This process takes less than 2 minutes.
- Roll the ragi into a ball (in the pan itself) with the help of a spatula.
- A silicone spatula works best for non-stick pans.
- When the ball is complete, turn of the gas.
Suggestion for Side Dishes
Ragi Mudde can be eaten with a lot of side dishes. However, since the balls are in sticky texture, it is best relished with some soupy side dish like:
- Dal tadka
- Dal fry
- Chicken gravy
- Butter Paneer
- Mutton curry
- Sambar
