Lobia in Tomato Soup

Ingredients

For 1 serving.

  1. Lobia (Cowpeas), soaked for at least 2 hours
  2. Tomatoes – 2 Medium Sized
  3. Four to five cloves of medium-sized garlic
  4. Half a teaspoon of mustard seeds for tempering
  5. Salt to taste

Seasonings

  1. Butter
  2. Garlic or Onion Chives (leaves)
  3. Cheese
  4. Oregano seasoning (the same as pizza)
  5. Chilli flakes

Recipe

  1. Soak the lobia for at least 2 hours.
  2. Wash it properly and boil it. You can use 1-2 whistles of a pressure cooker on a high flame.
  3. Blend 2-3 medium ripe tomatoes in a grinder/
  4. Make the tomato sauce.
    • In a pan, add half a teaspoon of mustard seeds.
    • Add 4-5 cloves of crushed garlic.
    • Let the garlic turn brown.
    • Add the tomato puree. It is recommended not to strain.
  5. Add the boiled lobia to the soup.
  6. Alternatively, you can put raw lobia and some boiled water into the tomato puree with some salt and cook it in the sauce.
  7. Cook for 10 minutes till the sauce becomes thick. It is optional, but you can add some flour to make it thick.
  8. Add some butter for a rich soupy texture and taste.
  9. Serve with garnish of your choice: coriander leaves, oregano seasoning, or chilli flakes.
  10. You can also add some cheese.
